<li>Now next process is as we do with our regular roti or chapathi. Make a large lemon size balls of dough, with the help of a rolling pin press the ball to roti shape, do dusting with wheat flour, this roti should be thin.</li>

<li>Chop ridgegourd into small pieces, keep it a side.</li>
<li>In a kadai heat oil add mustard seeds & cumin seeds , split green chillies, curry leaves ones they start splutter, saute chopped onions, add chopped ridgegourd pieces and keep lid on for 5minutes. Water starts woozing out from ridgegourd and let that dry out.</li>
<li>Now add salt, red chillie powder, turmeric powder. Fry for another 5minutes.</li>
<li>Switch off the flame add finely chopped cilantro and keep lid on top of it.</li>

<li>Dry roast all the ingredients under Masala powder let them cool and grind along with salt.</li>
<li>In a wide pan heat ghee let the mustard seeds splutter then add jeera followed by green chillies, cashew nuts and chopped eggplant (i chopped eggplant length wise so that it gives a nice look as well it takes less time to fry)</li>
<li>Add masala powder ones eggplant done, fry for 30 seconds in masala add chopped coriander leaves and then rice. Simply toss the rice well.</li>

Green gram - 1 cup<br />

Cumin Seeds - 1 spn just to sprinkle on dosa<br />

<li>Wash and soak RidgeGourd outer layer for about 8hours and also soak green gram separately</li>
<li>Grind ridge gourd outer layer ones it is coarsely grinded add soaked green gram, chopped green chillies, chopped ginger, salt, turmeric powder let it grind to a smooth paste. Consistency can be of our regular dosa.</li>
<li>Heat dosa pan and grease oil pour a laddle full of batter spread over the pan as you do for<a href="http://avanthiraoskitchen.blogspot.in/2009/08/plain-dosa.html" target="_blank"> regular dosa</a> but make sure that this should not be thin like our <a href="http://avanthiraoskitchen.blogspot.in/2009/08/plain-dosa.html" target="_blank">regular dosa</a>, make a thick spread. Sprinkle cumin seeds, finely chopped onion, oil on top of it as we do for <a href="http://avanthiraoskitchen.blogspot.in/2009/09/upma-pesarattu.html" target="_blank">Pesarattu</a>, let it fry on a low flame until sides of dosa leaves pan. This will take approximately 10 - 15 minutes, now fry on the other side.</li>

<li>Ones the milk boiled to 2 cups add sugar, let it dilute in the milk then add peeled and grated apple let it boil for another 5 mins.</li>
<li>Finally add elaichi powder, fried dried nuts.</li>

<li>Pressure cook potato and smash.</li>
<li>Cut the edges of bread, smash to powder and mix with smashed potato along with coriander powder, finely chopped green chillies, salt if needed can add a little water to make it a dough to make them into balls.</li>

<li>Boil tomatoes and grind them to paste.</li>
<li>In a pan heat 1spn oil and fry chopped onions till transculent, fry ginger garlic paste until the pungent smell go away. Add tomato puree, turmeric powder, red chillie powder, garam masala powder, salt let it cook till it leaves the vessel.</li>
<li>Now add enough water and let it cook till the desired consistency.</li>
<li>Now add fried kofta balls into this gravy and serve hot.</li>

<li>In a heavy bottomed pan heat milk, ones it starts boiling stir occasionally ones in 5minutes.</li>
<li>Ones it starts evaporating and milk thickens stir continuously until it comes 1/4th part of the milk.</li>
<li>Now add sugar and stir for about 15 minutes and add milk maid(optional) and stir until the consistency should be in such a way that you can make balls or to your desired consistency.</li>

To prepare this simple dish you need lots of interest and patience as i hadnt stirred continuously few lumps formed which can be smashed at the end to a smooth paste. I prepared this with 4 lts of milk and am done at the end, so we had this as it is without smashing but still it tasted good. Adding milk maid gave extra taste to these PalaKovas which is an optional ingredient.</div>

<li>Fry peanuts separately and peel off the layer, this is optional either you can use along with outer layer also.</li>
<li>Grease the pan with oil and fry mustard seeds, jeera, chana dal, urad dal, split green chillies. </li>
<li>Grind all these together along with salt and by adding a little water for making to paste.</li>
<li>Do tempering with the tempering ingredients, adjust chutney with water according to your consistency.</li>

<li>In a pan heat oil splutter mustard seeds, jeera, curry leaves now add pean nuts, chana dal, urad dal and let them fry. Fry finely chopped green chillies and lengthwise chopped onions until they are transculent.</li>
<li>Add chopped carrot, potatoe and let them fry.</li>
<li>In the meanwhile powder cinamom stick and cloves.</li>
<li>Ones the vegetables are soft add 4 cups of water and let it come to boil, add powdered cinamom & cloves, adjust salt to your taste</li>
<li>Now add suji to the boiling water by continuously stirring water with a spatula, cook by covering with a lid on top of it until water evaporates.</li>

<li>Soak rice overnight or atleast for 4 -5 hours and wash thoroughly.</li>
<li>Grind soaked rice, coconut along with salt by adding a little water, this should be like our regular dosa batter consistency.</li>
<li>Keep it aside for atleast half an hour.</li>
<li>Heat a pan or dosa pan grease with oil pour a laddle of batter and make it as regular dosa and cook on both sides.</li>

Carrot - 1 cup grated<br />
Rice - 1 cup<br />
Green Chillies - 3no<br />
Mustard seeds - 1/2 spn<br />
Onion - 1no<br />
Cilantro leaves - a bunch<br />
Cloves - 1 no<br />
Cinamom stick - 1/2 inch<br />
Sambar powder - 1spn<br />
Garam masala powder - 1 pinch<br />

How To Do:<br />

<ul><li>Cook rice with enough water along with clove and cinamom. keep it a side.</li>
<li>In a pan heat a spn oil or ghee splutter mustard seeds, fry grenn chillies and chopped onions fry until they are transculent now add grated carrot and fry for aminute.</li>
<li>Now add sambar powder, garam masala powder, salt, cooked rice mix well.</li>
<li>Finally add chopped cilantro leaves.</li>

How To Do:<br />

<li>Clean gobi florets in boiled salt water and keep aside.</li>
<li>In a pan heat oil fry chopped onions, green chillies, curry leaves until onions are transculent, add chopped cube sized aloo and let cook on a low flame with lid on top of it until aloo becomes soft add ginger garlic paste and let it fry until raw smell goes away.</li>
<li>Now add washed gobi florets, red chillie powder, salt, turmeric and toss well let it cook on low flame with lid on top of it for 2 minutes add enough water to boil for another 5minutes.</li>
<li>Add garam masala powder and let it cook for another minute and switch off heat by garnishing with cilantro.</li>
